Permit displayed. Certified food manager (CFM) present. Previous violations corrected. Active managerial control observed to be lacking. Spoke with CFM regarding facility cleaning, dishwasher maintenance and food safety. Health department permit issued.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Sausage observed to be cold holding at improper temperatures of 54°F in the three door lowboy in the kitchen. As per operator, food was sitting out at room temperature before being placed in the unit.
    Correction: Ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Food item placed in the walk-in refrigerator for rapid cooling.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: The door gasket to the two door lowboy, two door reach-in and the three door pizza make unit are in poor repair.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
  • Warewashing Equipment, Cleaning Frequency
    Observation: The interior surfaces of the mechanical warewashing machine are soiled with limescale that may decrease the effectiveness of the unit.
    Correction: Increase the frequency of cleaning or limescale deposit removal from the interior surfaces of the unit to maintain unit performance.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.
  • Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
    Observation: Ceiling, vent filters, vent covers and shelving in the kitchen noted with heavy accumulation of dust and were in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
  • Critical: Toxics - Common Name/working Containers of Toxics* (corrected on site)
    Observation: Working containers of bleach water are not properly labeled in the warewashing area.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.

    Observation: Food stored on the floor or food stored less than 6" above the floor. (Chicken);Elevate food storage onto approved shelving with minimum 6" legs or casters.

    Observation: The nonfood contact surface of the stove is not designed or constructed to be easily cleanable. Aluminum foil
    Correction: Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: Pizza prep unit gasket, Delfield handle, metal shelf were observed in a state of disrepair and damaged.
    Correction: Repair the gasket, handle, shelf to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the gasket, handle, shelf, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Equipment - Cutting Surfaces
    Observation: The cutting board along the prep unit are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
