Follow ups had been conducted from the previous inspection facility was having trouble getting the unit adjusted to maintain 41 degrees. Operator brought in a two door unit until the walk in was operating properly. Owners called the health department and stated that the unit is working below 41 verified today. Operator had refrigeration specialist at the facility called Health Department and stated the unit was set to defrost 4 times a day he adjusted the defrost cycle also stated that the compressor needed to be ventilated bringing cooler air in. Operator relocated TCS to other refrigeration and icing down raw chicken. Discussed not cooling foods in the unit and verifying the unit is able to maintain 41 degrees or less operator agreed. Another follow up will be conducted on 7-22-14 for the walk in cooler.

A follow up inspection will occur on Tuesday the following week if a call has been received. If not ready the schedule an appointment next week for opening i=once the walk in is operating. Operator to have handwashing signs at all handsink. Ceiling tiles back up around the walk in cooler. Leaving cooling logs for the operator to verify cooling methods. Operator to review employee health with all staff. Operator to track all temperatures. Discussed glove use, handwashing practices, and temperature requirements with the operator.
