    --Some refrigeration units lack thermometers. Any refrigerator holding foods requiring refrigeration are to be equipped with a thermometer. Owner installed a thermometer in one (1) unit during inspection.
  • Surface Characteristics of Indoor Areas of Food Facilities (46.901)
    --Firm constructed a baking area in the back stock area. The wall is not finished in this area. It is chipboard and should be finished in a smooth textured, light color.
  • Identification of Content on Food Storage Containers (46.282)
    --Multi-ingredient products are store packed, and offered for retail sale. Many such products are not labeled with ingredients nor processor. Discussed options to meet the intent of this requirement.
  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    --Deli display cooler holding product at 44.8 deg. F. The ambient temperature in this unit was 51 deg. F. Owner phoned repairman, who arrived and worked on this unit. Repairman stated the defrost timer may be sticking, and committed to stay on-site until it was repaired.
