    --Cold hold prep unit at the grill line not holding foods below 41 deg. F. Sliced tomatoes and cut lettuce held in this unit. Tomatoes are timed for 12 hours following slicing. Manager stated that a repairman is to service this unit later this afternoon.
  • Surface Characteristics of Indoor Areas of Food Facilities (46.901)
    --Noted in past inspections is that this place is aged. Some equipment is old, floor grout is worn, etc.
  • Cleaning Ventilation Systems (46.981(d))
    --Vent hood over fryers has dust / grease accumulation on parts. Also, it has some peeling paint on parts (note: paint not flaking). The back of the evaporator within the walk-in cooler has an accumulation of dust.
