    --Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Do not use dishwasher to clean equipment until repaired.
  • Frequency of Cleaning Equipment Food Contact Surfaces and Utensils (46.712)
    --Soiled knives observed stored in soiled knife rack in food preparation area. Clean and sanitize knives.
  • Food Shall Be Safe, Unadulterated & Honestly Presented (46.201)
    --Several cartons of buttermilk observed stored for use in facility which had expired sell by dates. Liquid milk products may not be held or stored in facility past the sell-by dates. Remove milks. Monitor dates.
  • Handwashing Facility Installation (46.822(b))
    --At mainline hand sink (by bain maries), hot water was turned off at time of inspection. When hot water was turned on, hand sink leaked. Make repairs to plumbing and maintain hot and cold running water at all times.
