    --Pink slime collecting on upper interior of ice machine storage bunker.
  • Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
    --Spring cleaning MUST begin now. Buildup of dried food residue on door handles, equipment exteriors, broiler rack and grease tray below flat grill, shelving piled with a lot of nonfood items / clutter.

    --Preset tableware is not wrapped, covered or inverted, or being removed at a frequency to assure tableware remains clean and sanitized.

    --Observed ice used as a coolant in the bar ice bin for the soda manifold, being used as drink ice / ice not separate.

    --Small fly-like insects / fungus gnats alighting in kitchen, bar, and dining areas. Two (2) full fly ribbons in kitchen, not the solution. Bucket of stagnant soda machine water under kitchen beverage bar covered with flies, wet floor material around degrading floor by kitchen sinks and under bar ice bin, also potential breeding areas.
  • Light Bulb Protective Shielding (46.922(a))
    --Six non-shielded florescent light bulbs above kitchen prep area, also need to remove the remaining bulb from new cooler and the other bulb leaning against wall by handsink.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    --Kitchen floor in disrepair, noted on previous inspections, need to initiate repairs / replacement. Kitchen ceiling needs repaired where water leaked from upstairs into kitchen. Peeling paint on ceiling needs removed.
