    --Gallon jugs of dressings, small pails of cut vegetables stored directly on floor within the walk-in cooler. All the container bottoms need wiped off / sanitized and stored properly on shelving, pop shells. Correct immediately.
  • Cleanability of Multiuse Food-Contact Surfaces & CIP equipment (46.542)
    --Two (2) of the three (3) plastic cutting boards at slicer table need refinished or replaced, deep knife cuts, scoring. PIC stated they don't use all of them for cutting food product, and would remove the two that need refinished.
  • Light Bulb Protective Shielding (46.922(a))
    --Five end caps missing from florescent light tube shields above slicer / mixing table area.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    --Loose, flaking paint on heat ducts above reach-in freezer and slicer area in back kitchen, again, remove the loose material, don't repaint. Buildup of cobwebs above the dough mixing / 3 bowl sink area in back kitchen, clean as needed.
