    --Chili sauce hot held in small crock pot had product temperature of 117-133*F. Removed and reheated to 165*F. USE your thermometer.
  • Ventilation Hood System Adequacy (46.614)
    --Hood canopy still not enlarged / added onto to cover the far right fryer or the flat grill on the other end of grill line. Owner stated that a contractor has been on-site to initiate the project, anticipated completion by mid-August 2014.
  • Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
    --Grease, carbon and breading collecting on walls, ceiling and side of hood above the second deep fryer noted below. As discussed, you must clean the affected area as often as needed until the hood project is complete.
  • Toilet Rooms Enclosed & Self-Closing Doors (46.922(d))
    --Self closing door hardware needs installed on ladies room door.
