--Observed boxes of food stored directly on the floor in the walk in freezer rather than 6 inches off of the floor as required. Also boxes are scattered and not organized.
- Hot Holding Potentially Hazardous Foods (46.385(a)(1))
--Roller Bite (beef, bacon, cheese and chicken, cheese ) and hot dogs located on the hot hold roller unit were hot held at 107*F., 84*F., 123*F. resp. Items were placed on this unit approx. 3 hours prior to this inspection. Items were discarded at this inspection and the unit temp. was increased. Reviewed with the PIC. Hot hold items above 135*F. Corrected.
- Date Marking of Ready-to-Eat Potentially Hazardous Foods (46.385(b))
--Commercially processed ready to eat food, Market and Deli Express sandwiches and Breakfast Burrito located in the front display cooler, and held more than 48 hours, are not being marked with the date they were removed from the freezer and placed in the cooler. Reviewed with the PIC. Corrected.
- Equipment in Good Repair & Proper Adjustment (46.671)
--Observed a badly torn door gasket on the kitchen walk in freezer.
- Cutting Surfaces Maintained (46.672)
--Observed the cutting boards on both the kitchen prep. coolers are pieced together and not a smooth easily cleanable surface. Provide new cutting boards for both of these cooler units.
- Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
--Non-food contact surfaces, walk in cooler fan unit, bottom shelf of Coca Cola cooler and both prep. coolers are not cleaned at a frequency to preclude accumulation of dirt and debris.
- Cleanability of Floors, Walls, & Ceilings (46.921)
--Observed a broken floor tile and peeling base coving by the door of the kitchen walk in cooler.
