    --Observed sauce being stored in containers that are not food grade (labeled Home Depot for paint.
  • Hot Holding Potentially Hazardous Foods (46.385(a)(1))
    --Beef was held at 128°F, in the hot hold unit, rather than 135°F or above as required. Beef was reheated to 185F and returned to hot hold unit.
  • Maintenance & Operation of Mechanical Warewashing Equipment (46.675(a)-(c))
    --The wash solution temperature in the mechanical warewash equipment sanitizing with chemicals was 102°F, rather than not less then 120°F, as required. Hot water tank was turned up. Corrected.
  • Frequency of Cleaning Equipment Food Contact Surfaces and Utensils (46.712)
    --Small amount of pink slime and black residue on housing of ice machine. Cleaned and sanitized during the inspection.
