  • Chemical Sanitization for Mechanical or Manual Warewashing Equipment (46.674(d))
    --Sanitizer in the mechanical dishwasher was not dosing. PIC recently changed the stock chemical, and stated she may have not primed it adequately. Primed the unit, and it operated properly for one (1) cycle. The feed tube continued to drip, suggesting a loss in the seal (cracked tube?) of the system. PIC stated she would phone the repairman, and manually feed chlorine until repaired. The concentration of sanitizer (quat) in the bar sink was less than 200 ppm. Suggest determining the volume of the sink, and dosing sanitizing tablets accordingly (one per gallon).
  • Surface Characteristics of Indoor Areas of Food Facilities (46.901)
    --Parts of the floor and wall in the vicinity of the fryers have an accumulation of dried grease.
