    --Observed an on site baked ham & cheese croissant being sold at room temperature and firm has no documentation / lab test results to show the product is shelf stable ( Aw , Ph etc. and no tine / temperature log- records being maintained. Product removed until above is documentation is provided to the dept. ( fax 724-443-8150 ) nor product is maintained refrigerated .
  • Identification of Content on Food Storage Containers (46.282)
    --Bulk ingredient storage containers, in the bakery area, is not labeled with the common name of the food.( also make sure containers are food grade units and / or have food grade bags- liners.
  • Cleaning Ventilation Systems (46.981(d))
    --Noted buildup of dust on filters in the hood system above the oven units. Also on the blades on the wall mounted fan.
