    --Food Employee observed donning single use gloves without a prior hand wash. Hands must be washed before wearing gloves. Staff was informed about hand washing. Staff washed his hands before wearing gloves.
  • Cooling Methods & Food Containers Used/Arranged (46.384(c)(d))
    --Observed half a container of chili with the lid on in the walk-in cooler. Staff stated that it was just put in the cooler not very long ago. It measured 101 degrees F. Staff stated that it was just put in there to cool from today. Transfer in to a shallow 2 inch container, do not put the lid on so it can cool rapidly in the walk-in cooler. Staff transferred into a shallow container then put it in the cooler with no lid.
  • Objective of Cleaning Food Contact Surfaces & Utensils (46.711(a))
    --Knives in the sides of Bain Marie knife rack observed to have food residue and was not clean to sight and touch. Wash, rinse and sanitize these knives and store clean knives in the knife rack. Staff washed, rinsed and sanitized the knives.
  • Surface Characteristics of Indoor Areas of Food Facilities (46.901)
    --Floor tiles in the back kitchen in front of the hand sink and by the hot water heater is are broken resulting in non smooth non-porous and non-absorbent. Replace these tiles within 2 weeks. Staff stated that they ordered new tiles and will be installing them ASAP.
