    --'Par cooked' wings are cooled to 70 deg. F within two hours
  • Air Gap Requirement, Design of Backflow Prevention & Conditioning Devices (46.822(c)-(e))
    --The following was noted in previous inspection and the condition has recurred or remains: "There is a hose attached to a three bowl sink. That hose extends beyond the potential fill level of the sink and is not equipped with a backflow prevention device. The drain for the ice machine may be hard connected to the main sewage drain."
  • Surface Characteristics of Indoor Areas of Food Facilities (46.901)
    --Noted previously, this place is aged and was converted from a bowling alley over many years of growth and modifications. There are places that the floor to wall union is not closed, some unfinished surfaces, etc. This matter was discussed in general terms with the owner today.
