Cooling, Heating, & Holding Capacities (46.611)
--Food facility has insufficient cooling equipment to cool foods quickly within the 6 hours required. Refrigerator brought to this event is not able to maintain temperatures of potentially hazardous foods at or below 41 degrees F as required. PIC arranged for another unit to be brought to this temporary location for transfer of all foods. As stated by PIC, foods currently stored in the refrigerator were purchased approximately 1-hour ago, and then brought to this location. Refrigerator dial was set at its coldest setting, and not able to be adjusted colder.
Location of Backflow Prevention Device & Conditioning Device (46.824(b)(c))
--Backflow prevention device on the water line in the temporary knock-down area, is not located properly. The device is placed in-line before the water-line splitter, which provide water service to two (2) separate facilities. Individual devices need to be placed so as to protect each facility.
Disposal of Sewage and Non-sewage Liquid Waste (46.863)
--Wastewater from the food facility is not being disposed of on a frequent basis. Wastewater was overflowing from collection tank onto surrounding ground surface. Wastewater tank needs to be monitored, and disposed properly to an approved sewage system (as approved by Fair Board / Office).
