--Ambient air temp. of the walk in cooler is 44*F. This unit must maintain product temp. at/below 41*F. Monitor the temp. of this unit and service as needed.
Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
--Observed a build up of dust/debris on the large kitchen fan. Also a build up of liquid/food debris on the metal spice storage rack in the kitchen area.
