    --Cooked rice was held at 91°F, in the cookline area, rather than 41°F or below as required. COS by disposing of rice
  • Ventilation Hood System Drip Prevention (46.581)
    --Hood filters, on cookline, have excessive grease and dust accumulation and may be contributing to an inadequate draw on the cookline.
  • Objective of Cleaning Food Contact Surfaces & Utensils (46.711(a))
    --Ice machine hopper and reservoir, a food contact surface, was observed to have food residue and was not clean to sight and touch.
