    --Equipment is not maintained in good repair or proper adjustment. The booster heater on the high temperature mechanical ware washing machine still requires frequent turning of the on/off switch from the on to off position then back to the on position for the booster heater to heat the final rinse water (sanitizing step)to the required temperature 180 degrees F or higher. When first tested, the machine never exceeded 99 degrees F during the final rinse until the manager moved the on/off switch from on to off then from off to on again. It appears that there is an electrical problem with the switch on the booster heater or a breaker built into this unit that is causing the switch to trip and the unit to shut down or turn off. IMMEDIATE CORRECTIVE ACTION IS REQUIRED.
