    --Food employee touching sliced tomatoes - a ready to eat food - with bare hands. Gloves were available, and corrected. Advised PIC that bare hand contact with ready to eat foods is prohibited. Gloves, or a suitable utensil must be used.
  • Time as a Public Health Control for Potentially Hazardous Foods (46.385(c))
    --Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods without written procedures or documentation to verify disposition of food. Pepperoni rolls were sitting out on counter at room temperature. PIC stated this practice will be discontinued, and they will be stored in the refrigerator.
  • Insect Control Device Design & Installation (46.922(c))
    --Open container of mice poison in back storage area. Open poison cannot be used in a food facility.
  • Toilet Rooms Enclosed & Self-Closing Doors (46.922(d))
    --Self closing device has been removed from employee restroom.
