    --Observed wiping cloths in the kitchen and behind the bar soaking in sanitizing solution which exceeded 300 parts per million (PPM) chlorine which at that level is considered toxic. The proper measurement for chlorine is 1 tsp per gallon of water to achieve 50-100 PPMs. Corrected on the spot.
  • Hot Holding Potentially Hazardous Foods (46.385(a)(1))
    --Observed beef gravy being hot held on the electric steam table with an internal temperature of 121 degrees F. Retail Food Facility (RFF) open less than 1.50 hrs. Gravy reheated to proper temperature. Corrected on the spot.
