    --Observed elevated temperatures in items which were improperly stored in the bain marie
  • Date Marking of Ready-to-Eat Potentially Hazardous Foods (46.385(b))
    --Observed numerous prepared foods which beared no date labeling. Department (FDA) code changes now require all potentially hazardous foods held in cold storage to be date labeled. Products must be used or discarded within 7 days. Provide date labeling for all potentially hazardous foods prepared on site and held in storage (example - breaded chicken, eggs rolls, pork, etc.....)
