--Batch cooked wings placed in a large container within the reach-in cooler. They should be placed in shallow containers. PIC could not verify the wings (cooked yesterday) were cooled to below 41 deg. F. within six hours.
Manual Warewashing Sink Compartment Requirements (46.612)
--Warewashing to include wash, rinse, sanitize, and then air dry. This applies to all utensils, which are not heated during cooking step.
Surface Characteristics of Indoor Areas of Food Facilities (46.901)
--Facility installed a new floor. Parts of the floor to wall union were not closed (with baseboard). Some walls (behind equipment) are not finished. That is, there are some wood studs exposed. Also, a couple of ceiling tiles are missing.
