    --Home-style dishwasher is used to wash dishes, which does not have any temperature measuring device to ensure sanitization has taken place. The three-basin sink to be used
  • Cooling, Heating, & Holding Capacities (46.611)
    --Small fridge in the dining room, the tall unit in the kitchen, and the prep unit are still not holding at 41 deg F or below. Nothing is stored in the units, and owner stated a call has been placed to have the units looked at for repair. No temperature sensitive food to be stored in the units until they can maintain food at 41 deg F or below.
