    --Damp wiping cloths were observed of counters throughout the facility. Store all wiping cloths in sanitizer solutions.
  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    --Food, such as cheese and chicken and cake, located in the refrigerated drawers and desserts, located in the dessert case, are not being maintained at or below 41 degrees F. Food was out of temperature for less than 4 hours and was moved into another unit.
  • Cooling, Heating, & Holding Capacities (46.611)
    --The refrigerated drawers under the cooking line and the dessert case are not capable of maintain food temperatures at or blew 41 degrees F. Service these units. Do not use these units to store food requiring refrigeration until they can maintain food temperatures at or below 41 degrees F.
