    --Employee was chopping lettuce for tacos and was handling the lettuce with bare hands. Instruct employees to handle ready-to-eat foods with utensils or gloved hands. Correct practice immediately.
  • Time as a Public Health Control for Potentially Hazardous Foods (46.385(c))
    --Pizzas and strombolis are on display for sale on a counter and they are not marked with a discard time. Place a note with the time the food was removed from the item and the time by which they are to be discarded, which can not be longer than four hours. Correct immediately.
  • Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
    --There is an accumulation of grease on the light shields in the exhaust hood over the cooking line. Clean the light shields to remove the grease.
