--Too much clutter collecting at staging table area, inside kitchen door. Basement area used to store food and supplies has become a catch all for maintenance items, jugs of used fryer oil, litter and general clutter, meaning that cleaning and pest control are lacking.
- Food Storage Requirements & Prohibited Areas (46.321)
--Food storage containers in contact with puddled water in grill line sandwich cooler. Must keep food and or containers up out of water until drain issue is corrected, see below.
- Food Temperature Measuring Devices Provided (46.632)
--Could not find an accurate air gauge thermometer in silver downstairs reach-in refrigerator, or the sandwich prep cooler in kitchen (they may be there, but could not find them as the coolers are jam-packed full). One (1) stem-type thermometer read "0"*F in a glass of ice water, rather than 32*F, corrected.
- Design, Construction & Installation of Approved System & Cleanable Fixtures (46.822(a) & 46.862(a))
--Ice machine drain empties onto floor / trough behind / under basement ice machine, puddled water collecting on floor / in the concrete trough. Drain pipe needs extended, trough needs cleaned out, so water will flow to sump. Above mentioned grill line prep cooler condensate water drain needs unplugged to evaporation pan, or rerouted to waste drain.
