--Between-use ice cream scoops stored in a container with chemical sanitizer container (Quat at 400 ppm), which is not an approved storage method for in-use & between-use utensils. Employee removed the scoops and container to be washed, rinsed, sanitized, and air dried. Reviewed storage requirements for in-use & between-use utensils.
Reheating Food (46.365)
--Commercially processed foods, meatballs and roast beef, only heated to 132°F before being placed in crock pots at 135°F or above. As discussed, cooled left overs and fully cooked commercially processed foods shall be reheated to 165°F within two hours or less, and then hot held at 135°F or above. Products were prepared at 11:00 am. Employee removed products to be properly reheated to 165°F when instructed.
