--Once again the three door Beverage Air bain marie used primarily by service staff has ambient temperature of 50*F. A. Cole Slaw 47.58F B. Vacuum Packed fresh cut green salad-47* C. Cut cucumber-48*F. All product temperature were internal and monitored with thermometer calibrated in ice water @32*F in presence of management.

--Two containers of product in walk in cooler (vegetable soup-48.2*F dated 3/24) being cooled by ice bath method and then placed on deep Lexan containers -12 quarts in a 22 quart container, dated and covered. Current cooling procedure fails to complete the second stage of cooling from 70-41*F in the remaining four hours. Containers double stacked (back to back) on racks prohibiting proper air circulation. There appears to be another mechanical defect in the salad bain marie (three door Beverage Air) with ambient temperature of 50*F. The rear coil is iced inhibiting proper air circulation.
