--Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dust, debris, crumb, or splash. Clean and sanitize the following: 1-Air filter located on the ice machine in the kitchen area. 2-Floor located in the dry storage/ Eliminate crumb. 3-Salad bar tray shelf 4-floor sinks under the salad island and under the self serve soda machine.
Surface Characteristics of Indoor Areas of Food Facilities (46.901)
--The salad island observed to be weathered in certain areas including chipped edges and surfaces. Peeled off trim / milll work observed on the component as well. Mr. Rhoa stated that the facility is planning on replacing the mill work in order to achieve a smooth, easily cleanable, non-absorbent surface. Any extensive renovations will require a food facility plan review in order to ensure cleanability standards.
Cleanability of Floors, Walls, & Ceilings (46.921)
--The floor / wall juncture to the right of the back entrance door of the kitchen observed to have cracked / missing floor coving and is not coved and closed to 1/32 inch. Install additional grout to this area including the top of of the floor coving where cracks are present between the wall and tile.
