--The dishwasher was observed loading dirty dishes into the dish washer and then handling clean dishes without first washing his hands. Wash hands in between tasks that may have contaminated hands, such as going from handling dirty dishes to clean dishes.
- Maintaining & Using a Handwashing Facility (46.825(a) & 46.981(h))
--The hand wash sink located at the cooking line was blocked by a table and a trash can. The hand wash sink at the dish washer was blocked by buckets. Do not block the hand wash sinks. Keep all hand wash sinks free from obstruction and accessible so employees can wash their hands.
- In-Use Utensils & Between Use Storage (46.302)
--Cups were being used as ice scoops in the ice bin at the waitress soda machine. Scoops were also observed lying on top of the ice. An ice cream scoop was observed sitting in standing water. Knives are being stored in between prep tables. Use utensils with handles for the ice and store the utensils so that the handle is above the top of the ice/food. Do not store ice cream scoops in standing water. Store the scoop dry or have a different scoop for each ice cream flavor and keep them in the freezer with the ice cream. Do not store knives in between prep tables because it is an area that is not easily cleaned or sanitized. Store knives in a clean and dry location.
- Objective of Cleaning Food Contact Surfaces & Utensils (46.711(a))
--Food debris was observed on the slicer. Mildew was observed on the splash board of the ice machine. Disassemble, clean and sanitize the slicer. Discard the ice in the ice machine and clean and sanitize the inside of the ice machine.
- Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
--The hood located in the kitchen is dirty. Clean the hood.
- Drying Clean Equipment & Utensils (46.771)
--The dish washer was observed towel drying clean utensils that just came out of the dish washer. Do not towel dry equipment or utensils. Allow all clean equipment and utensils to air dry.
- Handwashing Facility - Handwash Cleanser, Hand Drying, Signage, Handwash Aids or Devices Use Restriction (46.941(b)-(e))
--Paper towels were not located at the hand wash sink at the cooking line or at the dish washer. Soap and paper towels were not located at the waitress hand sink. Supply these hand wash sinks with soap and/or paper towels.
