- Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
--Some foods that require refrigeration held in a refrigerator, which is not operating. That unit was near 50 deg. F. Cook stated the unit started to run warm, yesterday. All foods, which were believed to be potentially hazardous were disposed of by PIC. He stated a repairman was expected, today.
- Cooling, Heating, & Holding Capacities (46.611)
--Cooked foods held in bins within insulated containers and on ice. These foods are not likely to hold below 41 deg. F. as required, and the business is slow enough (this time of year) that the products are not likely to be served within 4 hours. Product in these units were at acceptable temperatures
- Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
--Parts of the ice machine in the bar have some accumulation of a jelled matter. The cold plate appears clean, the nonfood contact surfaces are in need of cleaning.
- Surface Characteristics of Indoor Areas of Food Facilities (46.901)
--Facility has upgraded with new bar and service areas. Two new walk-in coolers. The majority of the kitchen facilities remain aged. There are some residues on some shelves, on the floor in hard to access areas, and on some equipment.
