    --Several food employees were observed touching deli meats, bread, etc. a ready to eat food with bare hands. All employees that handle ready to eat foods were informed to were gloves. Gloves are used at this time. Requirements were reviewed with the PIC. Corrected.
  • Food Storage Requirements & Prohibited Areas (46.321)
    --Observed two boxes of lettuce stored directly on the floor in dish washer room area, rather than 6 inches off of the floor as required.
  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    --Crab cakes in the prep. cooler at the grill area have an internal temp. at approx. 50*F. Cold hold PHF at/below 41*F. Items were discarded at this inspection. All other food items in these prep. units were below 41*F. Reviewed requirements with the PIC. Corrected.
  • Sanitizing Solution Testing Device Provided & Used (46.634 & 46.674(e))
    --Food facility does not have available sanitizer test strips or test kit to determine the appropriate sanitizer concentration at the bar three bowl sink.
  • Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
    --Observed a build up of ice in the bottom of the frosted glass cooler at the bar area.
  • 3 C.S, 6501-6510 (FEC)
    --Food facility operator failed to post an original, valid Food Employee Certification in a location conspicuous to the consumer.
