--Observed flour, and breadcrumbs stored directly on the floor in pantry area, rather than 6 inches off of the floor as required. COS by relocating.
Reduced Oxygen Packaging. (46.402)
--Food facility is reduced oxygen packaging assorted meat and soups/sauces, which have a potential for Clostridium botulinum / Listeria monocytogenes, without documenting or monitoring a secondary food safety barrier and without the required written procedures and HACCP plan. Information on requirements for a HACCP plan was provided to the head chef at the time of inspection. Facility will discontinue practice until a HACCP plan has been submitted and approved by PDA.
