--Plates observed stored under the drain lines of the sink in the wait station area. This is not permitted due to potential for leaks and/or splash. These were relocated on-site. Comply today and every day.

--Removeable cutting board on the bain marie along the cook line is heavily stained. Thoroughly clean or replace within five days.

--Two live cockroaches observed in pizza prep area. Dead cockroaches observed near the soda box, and on the floor behind cooking equipment. The facility is being treated bi-weekly. The following must be performed: a. Continue having the facility treated by a Certified Pest Control Operator b. Remove all unnecessary cardboard c. Thoroughly clean behind all cooking equipment d. Clean the edges of all refrigerator and freezer door frames e. Maintain all foods closed tightly f. Regrout between tiles where the grout has worn g. Maintain all exterior doors closed h. Clean up all dead cockroaches immediately

--A full-time employee must register for and attend an approved food safety course within fourteen days. Proof of registration must be submitted to this Department within three days.
