  • KDA_4_20211A2 - --In walk in cooler, Lexan plastic lid to salad container cracked and missing plastic. COS-Manager discarded lid. In kitchen, under food preparation table 2 plastic lids and 1 container cracked and missing plastic. COS-manager discarded lids and container.
  • KDA_Defacto - --3 compartment sink 200ppm Quaternary ammonia (parts per million) --chicken breast 160.5, breaded chicken breast 155.6, chili 154.6, drive thru chili 166.3, hamburger off grill 165.6, potato 185.5 --Discussed cooking procedures for chili using carry over chili meat. Managers procedure was ok. --Note: towel dispenser at drive thru hand wash sink partially obstructed by coffee maker. Employees can access towels but have to go around hot coffee and tea makers and dispensers. Suggested to manager that towel dispenser be relocated. --production line 1 hamburger 37.6, sliced tomato 41.0, lettuce 43.2,production line 2 sliced tomato 38.1, diced tomato 42.5, lettuce 42.3, reach in cooler, milk 40.3, salad 40.3, 42.6, Caesar salad 42.6, mix in frosty machines 41.6, 40.8, walk in cooler, corn 40.1, beans 39.6,salad lettuce 43.2, frozen foods ok --Sigma --wet wiping cloths 200ppm Quaternary ammonia
