KDA_4_70211 - --Mechanical warewash machine had been in use at beginning of inspection. There were two trays of drying equipment on the drying section of the unit. The hot water temperature of the unit was 157F, 148F and 151F.
KDA_Defacto - --milk case: white milk at 37F WIC: chocolate milk at 40F --on service line: gravy at 163F, stuffing at 199F, green beans at 197F.
