  • KDA_Defacto - --Ben E. Keith --Dish washer 162.4 --Facility serving cold breakfast no hot holding being done. --Note: Employee was putting grapes into cups at a sink. I asked her where she rinsed the grapes at? She replied that they were rinsed in the sink by where she was working. I checked the sink and discovered that the sink was directly plumbed into a direct drain connection. I explained that its a violation to do food preparation in a sink that is directly connected to the sewer and if the facility wanted to avoid any future violations for this an alternative method or re-plumbing of the drain, would need to be used for rinsing foods at the sink. An example alternative method would be placing a sheet pan over the sink and do the rinsing above the flood line. No violation cited since the grapes were not observed being rinsed below the flood rim of the sink. --Note: manager has chili set for thawing to reheat on Friday. Manager explained process and temperatures reached with in 2 hours correctly. --reach in cooler, facility made salsa 40.5, salad 39.3, milk service cooler, milk 41.8, vanilla milk 40.6, walk in cooler, corn 29.4, eggs 34.9,cut spinach 34.3, lettuce 34.1 frozen foods ok.
