Person in charge (PIC) indicated that they had been set out at 9:00 this morning. COS- added more ice to the ice bath to cover the sides of the containers. Checked temperatures after an hour and tomatoes were at 38F, sour cream at 41F, lettuce at 41F, and shredded cheese at 41F. Educated PIC that they should wait until right before they start serving to bring these items out of the cooler. Located on the chest freezer in the kitchen, there was a bag of pork tamales at 70F. PIC indicated that they had set the tamales out to thaw overnight. COS- discarded. Educated PIC on proper thawing techniques. Located on the kitchen prep table, there was a pan of chile rellenos at 64F. PIC indicated that they had been pulled from the cooler an hour earlier and that they were going to fry them soon. COS- moved to RIC until ready to use. Located on the kitchen prep table, there was a container of mole sauce at 63F. PIC indicated that it had been set out an hour ago. COS- put in RIC until ready for use.
