KDA_3_10111 - --Located in the Beverage Air reach in cooler (RIC) under the wait counter, there were two containers of menudo sauce that had an accumulation of mold growing in them. Corrected on site (COS)- discarded. KDA_3_30211A1a - --Located in the kitchen RIC, there was a box of raw beef stored in contact with a bag of raw jalapeno peppers. COS- moved jalapenos. KDA_3_30212 - --Located on the kitchen prep table, there was an unlabeled shaker bottle of a white granular substance. PIC indicated that it was salt. COS- labeled. KDA_3_30412B - --There was a bucket of salt and a bucket of garlic salt located under the small kitchen prep table with a scoop with no handle in contact with the salt and garlic salt. KDA_3_50113A - --Located on the counter of the three vat sink, there was a bag of frozen chicken that was out for thawing. COS- put bag of chicken in a pan and set under cool running water to thaw. KDA_3_50116A2 - --Located in an ice bath on the small kitchen prep table, there was a container of diced tomatoes at 49F, a container of sour cream at 47F, a container of shredded lettuce at 45F, and a container of shredded cheese at 47F. Person in charge (PIC) indicated that they had been set out at 9:00 this morning. COS- added more ice to the ice bath to cover the sides of the containers. Checked temperatures after an hour and tomatoes were at 38F, sour cream at 41F, lettuce at 41F, and shredded cheese at 41F. Educated PIC that they should wait until right before they start serving to bring these items out of the cooler. Located on the chest freezer in the kitchen, there was a bag of pork tamales at 70F. PIC indicated that they had set the tamales out to thaw overnight. COS- discarded. Educated PIC on proper thawing techniques. Located on the kitchen prep table, there was a pan of chile rellenos at 64F. PIC indicated that they had been pulled from the cooler an hour earlier and that they were going to fry them soon. COS- moved to RIC until ready to use. Located on the kitchen prep table, there was a container of mole sauce at 63F. PIC indicated that it had been set out an hour ago. COS- put in RIC until ready for use. KDA_3_50118A1 - --Located in the Beverage Air RIC under the wait counter, there was a container of pork chili with a date of 8/27. COS- discarded.
