Employee stated the pakora sits then fried again per order. Make table top area: cooked chicken 48F, cooked beef 44F & cooked vegetables 45F. All other items on bottom portion of make table were at temperatures below 41F. Lid was open at beginning of inspection. Yogurt is made by boiling milk, then sitting out at room temp for 2 hours, then seal container and place in WIC for a few hours to ferment. Owner states Dr Fadi with KSU was out and approved his process, but has produced no documentation that this occurred. When owner grabbed the lids, roaches scattered and one was later observed crawling on owner's shirt. Roaches ranging in size from juvenile to adult, some present with egg sacks.
