- KDA_2_30114I - --KDA 69 observed the cook rinsed a knife off using his gloved hands. After he rinsed off the knife he handled cooked rte pancakes. COS, the pancakes were discarded and the cooked washed his hands.
- KDA_3_30211A1b - --In the 1st RIC in the kitchen a container of raw beef steaks were stored on a shelf over omelette batter that is made with pasteurized eggs. COS, moved.
- KDA_3_30414B1 - --There was no detectable sanitizer in the sanitizer buckets throughout the restaurant. They were made with hot water. COS, made with room temperature water and measured 200ppm.
- KDA_3_50116A2 - --In the MT in the kitchen sliced tomatoes had a temperature of 47 F, sliced cheese 47 F, and sliced cheese 47 F. The manager said the items were put in the MT 1 hour ago. COS, put in an ice bath.
- KDA_4_50213B - --The 2 dispensing tubes on the bulk milk containers were cut longer than 1 inch and 1 dispensing tube was not cut diagonally. COS, cut diagonally at 1 inch.
- KDA_4_60111A - --On the clean dish rack next to the warewashing area there was a lid and a pan stored as clean with sticker residue on them. Also, on a shelf over the drainboard of the 3-vat sink 15% of the food storage containers had sticker residue on them. Also, a grease strainer stored as clean on the wall by the 3-vat sink had food debris on it. Also, the can opener had food debris on the blade. COS, all items moved to be cleaned and sanitized.
- KDA_6_50111 - --There are pieces of the tile missing by the warewashing area.
- KDA_6_50112A - --There is food splatter on the wall by the clean dish rack in the warewashing area. There is dust accumulation in the hood over the warewashing machine.
