During the inspection, repairman was onsite. PIC said they are still waiting on their new dishwashing machine.

KDA_3_50116A2 - --In the WIC, 2 trays of beef brisket (7) had measured temperatures of 44F, 46F, and 47F. PIC said it was cooked 9/8 in the evening. COS PIC said they will send it back to the meat distributor. Meat was taken out the WIC and but in a distributor bin.
KDA_4_20211A2 - --The cutting board in the cooks area had large cuts on the surface. Owner informed inspector he will be purchasing a new cutting board. The chopping block in the block area had a large dip in the center. Owner informed inspector he had purchased a new chopping block.
KDA_4_501110A - For a stationary rack, dual temperature machine, 66°C (150°F)
KDA_5_20511B - --Observed the PIC add water to the sanitizer bucket in the handwashing in the front area. COS PIC was educated.
