(corrected on site-dates corrected) A container of beans dated 11/10 and a container of verde dated 11/16 were stored in walk in cooler. Person in charge said they were removed from freezer on 11/20 and dates were not updated. (corrected on site-dates corrected) All foods prepared on site and then frozen must be updated and have a use-by date 6 days from when pulled from freezer. The first day is counted as the day it is cooked and frozen.

  • KDA_3_50116A2 - --A container of cheese enchiladas were stored in make table with a temperature of 51. Person in charge said they were on counter for less than 2 hours. If they decide to do this then a statement will have to be written saying they use this practice. Cheese enchiladas will have to be marked when they are removed from cold holding and disposed of after 4 hours.

  • KDA_3_30211A1b - --There was a carton of raw shelled eggs stored directly over a metal container of ready-to-eat cheese in kitchen Fogel reach in cooler. (corrected on site-eggs moved below cheese)

Person in charge said they were sitting on counter on ice for two hours and they just moved them to make table. (corrected on site-enchiladas moved to walk in freezer for quick cooling) The entire surface of container must be covered with ice.
  • KDA_4_60111A - --11 spoons and spatulas stored clean above prep table in kitchen had visible dried food debris. (corrected on site-all utensils taken to dishwasher for properly cleaning)
  • KDA_5_20515B - --Handwashing sink next to kitchen is not working.
