    Observation: 1) Ice Cream machine holding liquid cream was 54* F. Machine is no linger in use and service called today 2) Turbo Air Candy reach-in cooler was 43*F, temp turned down. Will also get serviced.
  • Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
    Observation: Must date mark cut tomatoes, lettuce, deli meat, cooked meat, and hot dogs if not used within 24 hours after opening package or preparation. Have 7 days from date mark to use or discard.
  • Food employees hair is effectively restrained
    Observation: Must war effective hair restraint (hat, hair net, visor, or bandanna) REPEAT VIOLATION.
  • Physical facilities maintained in good repair
    Observation: Missing floor tile in several ares behind counter. Replace to make floor smooth, nonabsorbent, and easily cleanable. REPEAT VIOLATION

  • Roasts held at a temperature of 130°F or above
    Ocecream toppings cooler was 45 degrees at start of insection. Turned knob to a lower setting. Cooler now holding 38 degrees. Ensure unit hold potentially hazardous foods 41 degrees or below at all times. CORRECTED ON SITE.
  • Food employees hair is effectively restrained
    Staff hair was pulled back in a tie. Must still wear an adequate hair restraint (hat, hair net, visor or bandana) REPEAT VIOALTION.
  • Food storage - preventing contamination from the premises
    Chip rack bottom shelf is low to the floor. Must adjust to maintain at least 6 inches off the floor for easy cleaning and food protection. Ensure to move pallets that food is stored on to clean underneath.
  • Test kit provided and used to measure sanitizing solution concentration
    Has quat test strips for bleach-water solution. Must provide chlorine test strips for bleach-water sanitizer solution to ensure it is maintained 50-100ppm.
  • Cleanability of floors, walls, and ceilings
    Cracked or missing tile 1) in area near fryers and hot hold steam table and 2) near red crates under cash register table. Replace to make surface smooth and easily cleanable.
  • Material characteristics of non-food contact surfaces
    White painted wood for shelving and cupboards is chipping and paint is worn. Re-paint with at least 2 coats of light colored paint to make sure smooth and easily cleanble.
