Observation:The ceiling in the kitchen is yellow and soiled with residue likely from inadequate ventilation. The walls in the dishmachine area are soiled. Floors under shelving in the walkin cooler and walkin freezer are soiled with food spills and residue.

Observation:Food handlers were not wearing hair restraints during food preparation activities. 2-402.11 Effectiveness. Observation:Individual packets of whipped butter stored on customer tables without temperature control temped at 76.3 F. Product labeling indicates product must be kept refrigerated. Corrected at time of inspection. All butter packets disposed of during the inspection.

Observation:Walls and ceilings in the kitchen are soiled from yellow residue that appears to be due to inadequate ventilation.

Observation: Food handler touched cooked meatballs with bare hand while scooping the food into a pan. Corrected at time of inspection. Food handler began using gloves to eliminate bare hand contact with ready to eat foods.

Observation:Paint is peeling off of the ceiling in the kitchen above the prep table. Wall coving tiles are missing in the kitchen. The wall guards are missing in places in the kitchen creating surfaces that are not easily cleanable.

Observation: Container of cooked pulled pork date marked 3/24 and container of pork butt date marked 5/17 stored in walkin cooler are past the 7 day use by date. Corrected at time of inspection. Products were disposed of during the inspection.

High temp dishmachine was not capable of heating the surface of a plate to 160 F during final sanitizing rinse. Establishment will wash, rinse, and sanitize dishes manually or transport the items to one of their other licensed kitchens on the property for proper washing/sanitizing in a dishmachine until the unit is repaired.
