Observation: Observed employee bare hand lettuce, tomato, pickel, and onion. Corrected on site by discarding.

Ice for consumption must be completely separated from ice in contact with the soda cooling plate behind the bar, in addition to covered for protection from environmental contamination.

Repair the screen for kitchen window and remove exposed fiberglass insulation from above same window.
- Miscellaneous sources of contamination
Utensils stored in compitetion with the hand wash sink must be relocated for protection from contamination. Observed beef thawing in stagnant water - placed into refrigerator for correction. Meats must be thawed under refrigeration, under cold running water, or as part of the cooking procedure.
- Test kit provided and used to measure sanitizing solution concentration
- Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
Observed raw meats stored above ready to eat foods in reach-in cooler. Raw animal foods must be stored in order of cook temperatures: raw eggs, pork & fish above beef, and beef above poultry with no ready to eat foods able to be contaminated.
- Frozen PHF/TCS foods are properly slacked and thawed
