Observation: Vegetable slicing equipment stored by the veggie three-compartment prep sink had food residue build-up. Person in charge removed equipment to be cleaned and sanitized.

Observation: Fish in open top refrigeration at a temperature of 55*F next to fryers. Unit had been turned off for cleaning. Person in charge instructed food employees to remove fish to be stored in walk-in-cooler and discard all dairy/batter ingredients. Person in charge instructed food employees to turn on refrigeration unit.

Left FDA Guidance Document with manager. --Observed sanitizer buckets stored on floor in kitchen. Observed mold growth on underside of fountain beverage machimes.
