    Observation: No sanitizer in 3rd compartment of sink. Employee added sanitizer to compartment and inspector showed the employee how to test the concentration. Concentration is now at 200ppm.
  • Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
    Observation: No date mark on items that have been removed from the freezer or opened from the original package. Employee date marked all the items during inspection.
  • Test kit provided and used to measure sanitizing solution concentration
    Observation: No quat sanitizer test strips on site.
