Observation: 1) Must ensure wood treated counter and cupboard for 3 compartment sink and food preparation sink is water-proof, non absorbent, and easily cleanable. Must paint inside unit with at least 2 coats of light colored paint to comply and prevent water damage. 2) Re-caulk around all sink to ensure gaps are closed. (all 3 sinks in kitchen area dn restroom hand sink)
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: Must provide a commercial grade reach-in cooler for potentially hazardous foods to ensure food is maintained at least 41 degrees or below at all times.
- Manual warewashing sinks requirements
Observation: 3 compartment sink is not deep. Must replace sink or only use items that can be fully submerged when ware washing to ensure adequate sanitation.
- Food storage - preventing contamination from the premises
Observation: All food storage shelving must be at least 6 inches off the floor for easy cleaning and food protection.
- Food temperature measuring devices are provided and readily accessible
Observation: Provide a stem thermometer to check hot hold, meat temperatures, and adequate cooking temperatures.

Observation: 1) Provide cove base for restroom for wall/floor junctures. 2) Cover hole around drain line for hand sink in restroom.
- Heating, ventilating, and air conditioning systems design, installation, and cleaning
Observation: Repair ventilation system in restroom.
- Storage of clean equipment and utensils
Observation: Must provide a way to store dirty dishes and utensils away from clean. (ex. have a tub for the dirty and air dry the clean above the sinks)
- Backflow protection

Observation: Repair leaking faucet for 3 compartment sink.

Observation: Must provide new plug for 3 compartment sink to ensure water is held in sink properly for ware washing.
