- Equipment location, installation, repair, and adjustment
Observation: Steam well is in disrepair. Unit will not heat above 128F. Food was kept on the flat top grill to maintain hot holding of 135F. PIC stated the steam well will be repaired. Using the flat top grill to hot hot foods will be a temporary solution.
- Handwashing signage
Observation: No handwashing reminder sign posted at the hand sink.
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: Sour cream(43F), Guacamole(45F) in the red cooler were not maintaining cold temperatures of 41F or below. PIC added more ice and water to the cooler to rapidly cool foods.
- Cooling foods are stored properly
Observation: Diced cooked chicken(90F) in a sealed plastic bag was cooling on ice in the blue cooler. Cooler held taco condiment items-shredded cheese and guacamole. PIC moved the bag to another cooler. The chicken was spread out and placed over more ice to rapidly cool.

Observation: Diced chicken hot holding in the steam well (114F) was not maintaining 135F or above PIC reheated the meat on the flat top grill to 165F.
