Observation: Missing light bulb in reach-in cooler "Tropicana" nest to service line. Must provide adequate light intensity in the area where is food stored inside reach-in refrigerators for easily cleaning and maintaining. Replace or fix the lights.

Observation: Ice machine has visible mold up buildup on top of the white cover (inside). Empty, wash, rinse, sanitize, and maintain cleaning at frequency to prevent future growth and contamination. This is repeat violation.

Observation: High temp dish machine was temping 152*F after 8 cycles. For proper sanitation dishes must reach 160*F. Called for service during inspection. May not use dish machine until plate surface temperature can reach to 160*F or higher.

Observation: Backflow prevention device on mop sink leaks. Must maintain all plumbing in good working order to prevent contamination.

Observation: QA sanitizer in the bucket was too weak. The concentration of QA mus be maintained between 200 to 400ppm. New sanitizer was made during inspection. Repeat violation. Change sanitizer solution between each section.

Milk being held in up right reach-in with door propped open was temped at 43.3 degrees. All potentially hazardous foods must be maintained at 41 degrees or less. Milk moved to milk cooler, designed to maintain temp when open.

Repair wall that was removed to add plumbing from garbage disposal.
